Claire & Tom's Wedding 2022
Claire & Tom were married in a church near Taunton and then came back to their parents house for the wedding breakfast. This was held in a pole marquee in their garden. We had a small catering tent at the rear and parked a refrigerated van out of sight. We had set the kitchen up 2 days earlier, using mainly propane equipment so required very little electricity.
We had set up the marquee the day before with the bride and her friends, we set up tables, and we laid cutlery, crockery and glasses. They did the table decorations and name cards after we had left. The groom slept that night in the marquee with his friends. a night security team!
As the guests arrived back from the service they were served chilled Prosecco or Elderflower Fizz in beautiful glass flutes. The drinks were provided by the couple but Food 4 You chilled it for them, provided the flutes and our staff served the drinks. And when most guests were sipping drinks we started serving their canapes - 6 per person served in the garden on slates garnished with summer flowers. For almost two hours the fizz and the canapes kept the guests happy until it was time to go into the marquee. An usher called them into the marquee.
The set up was informal but beautifully classy, we had organised some stripped pine tables for the couple which they finished with lace cloths and meadow flowers. We then added our linen napkins, our fine glasses and our porcelain crockery. It looked amazing!
Starter was a sharing oak platter loaded with warm local brie, local tomatoes, Devon smoked trout, Somerset smoked chicken, guacomole, sour creme and a roasted mediterranean vegetable salad. All served with our fig and walnut bread.
Main Course was roasted Sirloin of Somerset beef, sticky shallots and red wine gravy. Each table was presented with a huge Sirloin joint which was carved by the guests at the table. We supplied carving knives, aprons and chefs hats. Each table had a designated carver pre chosen by the bride. Also served was roasted new potatoes with sea salt & rosemary and mixed green vegetables in herbed butter - sugar snap peas, fine green beans and mange tout. The vegetarians had a sweet potato, mushroom and spinach pitivier with minted pea puree.
Choosing pudding was a problem for Clair so they went for a shot glass trio. Rich chocolate pot with roasted hazelnuts, lemon posset with meringue kisses and a Pimms jelly. All served with pink peppercorn shortbread hearts.
They supplied all table wine and fizz for the speeches. They also gave wine, beers and ciders all day to their guests. We chilled it all and served it in our glasses.
At 8.00pm we served a huge local cheese buffet with crackers, breads. quince and chutneys. Plus some amazing local sausages in soft finger rolls.
There were 120 day guests and a further 40 evening guests.
We cleared the marquee at 1.00am and left. There were a few guests chatting but most people had left having enjoyed a wonderful day.
For this we charged £50.00 plus vat for the wedding breakfast = £60.00 x 120
We charged £8.00 plus vat for the evening food = £9.60 x 160
All the glasses cost £220.00 plus vat = £264.00 (and they go back dirty).
We charged £120.00 plus vat = £144.00 for dedicated wine waiters who also looked after their bar.
These were our charges, there was nothing else to pay. You can see that our costs are clear and easy to understand.
The whole day including times, numbers, food, prices, responsibilities and expectations are kept in a day plan which Dawn will build with the couple in the months leading up to the event.
If you think we may be able to help you just email Dawn!
